Warm weather is upon us and that means we want all the ice cream! This no-churn Cinnamon Roll Ice Cream features Rhodes Anytime cinnamon roll and couldn’t be easier to make. The best way to end all those blazing summer days.

There is nothing better than a cold bowl of ice cream after a hot day spent outside. And what makes this one even better is the simplicity of this recipe. Minimal ingredients and less than 30 minutes of prep goes into making this ice cream.

Ingredients for Cinnamon Roll Ice Cream

The list is easy for this recipe! Don’t we love that, especially for summer?! Here’s what you need:

  • Rhodes Anytime! Cinnamon Rolls: Find these ready to bake cinnamon rolls in the freezer section. You don’t have to thaw these, just place in the oven from frozen and bake. I used the traditional cinnamon rolls but you could also grab orange rolls or sticky buns to mix it up.
  • Heavy cream: This is the base of the ice cream. It makes it super creamy and rich.
  • Sweetened condensed milk: The other component of the ice cream base. This adds more creaminess and sweetness to the mixture.
  • Vanilla extract: To add a little extra flavor.
  • Kosher salt: Just a pinch to balance out the sweetness in the ice cream.

No Ice Cream Machine? No Problem!

You don’t need an ice cream machine with this recipe. Instead, we went with a creamy no-churn recipe that anyone can whip up this summer.

If you’ve never made no-churn ice cream, don’t worry. It’s super simple and only takes a few minutes to make and get in the freezer.

Start by baking the Anytime! Cinnamon Rolls according to package directions. Once they are baked, frost them and allow to cool.

Once cool, cut up 3 cinnamon rolls into small bite-size pieces and set aside. Save the rest for breakfast or a little sweet tooth satisfaction later!

Make the Cinnamon Roll Ice Cream Base

Now it’s time to whip up the ice cream base.

Start with a large bowl and pour in the heavy cream. Whip it up until hard peaks form. That means when you lift up a whisk or spoon, the peak stays instead of melting back down.

I like to use a stand mixer or hand mixer to make the process go quickly. Once it’s whipped up, add in the sweetened condensed milk, vanilla and salt. Carefully fold everything together.

Now fold in the cinnamon roll pieces. Keep a few pieces for topping the ice cream. Spread the ice cream base in a freezer safe container then sprinkle with the remaining cinnamon roll pieces.

Cover and freeze for at least four hours or up to overnight.

Frequently Asked Questions

How long will the ice cream last? If stored in an airtight container in the freezer, the ice cream will last for up to a month.

What can I add to put it over the top? If you like your ice cream overloaded with goodness, think about adding some of these options:

  • Cinnamon chips (find them with the chocolate chips)
  • Chocolate chips
  • An extra sprinkle of cinnamon
  • A swirl of maple syrup to bring the breakfast flavors home

Can I use fat free sweetened condensed milk? Although I haven’t tried it, I don’t recommend it. It wouldn’t taste as delicious and could alter the texture of the ice cream.

Ingredients

  • 1 package Anytime! Rhodes Cinnamon Rolls
  • 2 cups heavy cream
  • 1/2 teaspoon vanilla extract
  • pinch of salt
  • 14 ounce can sweetened condensed milk

Instructions

  • Bake cinnamon rolls according to package directions. Frost cinnamon rolls then allow to cool. Once cool, dice three rolls into small bite-size pieces. Place remaining cinnamon rolls in an airtight container to enjoy later.
  • Pour heavy cream into a large bowl. Add vanilla and salt. Whip until stiff peaks form. Carefully fold in sweetened condensed milk. Add all but a few pieces of cinnamon roll to the mixture and fold again. Pour into a freezer safe container. Top with remaining cinnamon roll pieces. Cover and freeze for at least four hours or up to overnight.
