Football season needs all the yummy dips. This hot corn dip is super simple to make in the slow cooker and perfect for game day snacking.

I have a thing for dips. Chips and dip will forever be my go to snack situation. Especially when it’s game day and I need some easy snacks or apps to throw together.

This Hot Corn Dip is so simple to make in the slow cooker and is filled with so many delicious ingredients. If you’re looking for an easy party appetizer, you’re going to want to try this one.

Ingredients for Hot Corn Dip

  • Bacon: You’ll need 6 slices of bacon for this recipe. You could add more if you like it extra bacon-y.
  • Cream cheese: Full fat cream cheese is best for this recipe. A low fat option may cause it to separate.
  • Sour cream: Again, full fat is best.
  • Blue cheese: It goes so perfectly with the bacon and corn. If you aren’t a fan of blue cheese, cheddar makes a good substitution.
  • Frozen corn: Thaw and drain before using in the dip.
  • Kosher salt and pepper
  • Cilantro

My Favorite Mini Slow Cooker

I know most people don’t have a mini slow cooker but hear me out. Sometimes you want to make a small batch of something. Or in this case, a dip. A regular sized slow cooker is going to be too big for those types of recipes and may not cook as well.

Mini slow cooker to the rescue. I promise you, I use this so often throughout the fall and winter months.

How to Make Slow Cooker Corn Dip

Start by heating a large skillet over medium heat. While it’s warming up, dice the bacon into small, bite-size pieces.

Add to the hot skillet and cook until crispy. Drain on a paper towel.

Add the cream cheese, sour cream and blue cheese to your slow cooker. Stir until well combined then add the corn, bacon, salt and pepper. Cook on low for about 2 hours, or until hot and creamy.

Bacon and Blue Hot Corn Dip

Ingredients

  • 3 1/3 cups frozen corn, thawed
  • 8 oz. cream cheese, cubed
  • 1/3 cup sour cream
  • 1/2 cup crumbled blue cheese
  • 6 sliced bacon, cooked and crumbled
  • 1/4 tsp. kosher salt
  • 1/4 tsp. pepper
  • fresh cilantro

Instructions

  • Dump all ingredients into a crockpot and mix. Cook for 2 hours on low, stirring occasionally. Serve with tortillas chips or raw veggies for dipping. Top with cilantro if desired.
