It’s sloppy joe time. It’s comfort in a bowl. It’s a one pot, 30 minute situation. How excited are we about this sloppy joe and pasta mash-up?!
I love a one pot meal, especially on busy weeknights, and looking at the numbers you all do too. Less dishes for the win.
And there are just so many other great things about a one pot meal. When we’re talking pasta the biggest bonus is that it’s cooked in its sauce, rather than water, so it soaks up all that delicious flavor and goodness. Yes yes yes.
One pot meals are usually pretty simple and often employ a dump and simmer tactic. Because sometimes you want to spend time savoring the cooking process and sometimes you just want to put it in a pot, walk away and be done with the whole thing. I totally get it.
Another bonus? You can double the batch without any additional work for meals throughout the week or even to freeze.
Did I mention minimal dishes?
The sauce portion of this dish is very similar to my favorite sloppy joe recipe and is packed full of flavor. There’s even a little secret ingredient in there that makes all the difference.
Pickle juice. It adds a little tang to the sauce but not so much that it’s sour. The bulk of the sauce is beef stock and tomato sauce with some other ingredients like mustard, Worcestershire and a teeny tiny bit of brown sugar to add some depth to the sauce.
You can use any type of short cut pasta you have in your pantry but I’m really loving it with rotini right now because the sauce and ground beef gets all up in the swirls. It’s a beautiful thing.
FYI, this is my FAVORITE pot to use when I’m making one-pot meals. It’s a fraction of the price of other big brands and works just as well. Lots of size options and a few color choices too. Plus, it’s great for baking bread in if that’s your thing.

One Pot Sloppy Joe Pasta
- 1 Tbsp. olive oil
- 1 small white onion, finely chopped
- 1 tsp. kosher salt
- 1/2 tsp. pepper
- 1 lb. ground beef
- 1 6 oz. can tomato paste
- 1 15 oz. can tomato sauce
- 4 cups beef stock
- 1/4 cup pickle juice
- 1 Tbsp. yellow mustard
- 1 1/2 Tbsp. Worcestershire sauce
- 1 Tbsp. brown sugar
- 1 lb. rotini pasta
- Heat a large pot over medium heat. Add olive oil to hot pan. Saute onions for 2 to 3 minutes, until translucent. Season with salt and pepper and cook another minute. Add ground beef, breaking up with a wooden spoon, and cook until no longer pink. Add tomato paste to the pot and stir around. Cook for 2 to 3 minutes, until rust colored.
- Add tomato sauce, beef stock, pickle juice, yellow mustard, Worcestershire sauce and brown sugar. Bring to a heavy simmer. Add pasta. Cook 8 to 10 minutes, or until pasta is tender.
