I’m coming at you with another slow cooker recipe because aren’t they one of the best kitchen inventions ever. Toss a bunch of stuff in a pot, walk away for the day and dinner is done. There’s just nothing not to like about that situation.

What’s even better about this recipe is that this jalapeno chicken only requires 5 ingredients. Chicken drumsticks or thighs, honey, jalapeno jelly and a lime. 

I went with bone-in dark meat for this recipe for a few reasons. First, bone-in meat yields a much richer flavor while it cooks. Second, dark meat (especially with the bone) stays a lot juicer and cooks up to be more tender than white meat. It’s also more forgiving if you overcook it a little.

Let’s talk about the jalapeno jelly my friends. Have you ever tried it? It’s basically my favorite condiment right now (especially for dipping these crispy guys) and you can find it at pretty much any grocery store in the jam and jelly section.

It’s a little bit sweet and a little bit spicy and a lotta bit delicious. It’s killer on burgers too so keep that little tidbit in your back pocket. 

The honey adds an extra dose of sweetness to the chicken and makes the sauce a little sticky as it cooks away in the slow cooker.

The prep work is pretty much nonexistent for this one. Place chicken in slow cooker, sprinkle with salt and pepper. Whisk together 4 ingredients and pour over chicken. Set to cook and walk away for 6 hours. 

The chicken coats in the sweet and spicy sauce as it cooks and the honey caramelizes adding a yummy richness to the chicken. Serve with a simple green salad and Instant Pot Rice Pilaf (my other kitchen gadget obsession) to make it a ridiculously easy meal.

Ingredients

  • 2 1/2 lbs. chicken drumsticks or thighs
  • 1/2 tsp. kosher salt
  • 1/4 tsp. pepper
  • 1 Tbsp. honey
  • 1 (10.9 oz.) jar jalapeno jelly (1 1/3 cups)
  • 1/2 cup chicken broth
  • 1 lime, juiced

Instructions

  • Place chicken in the slow cooker. Season with salt and pepper. 
  • In a bowl, whisk together honey, jalapeno jelly, chicken broth and lime juice. Pour over the chicken.
  • Cook on high for 4 hours or low for 5 to 6 hours.
