With the weather changing, I’m all about finding fall and winter meals that are just as easy as throwing something on the grill. And these Baked Chicken Bites definitely fit the bill.

How to Make Baked Chicken Bites
These are the easiest to make. If you want to keep it even easier, line your baking sheet with parchment paper or aluminum foil. Preheat the oven to 400 degrees F.
Cut the chicken into 1-inch pieces and add to the prepare baking sheet. Drizzle with melted butter and sprinkle on the spices. Toss together with tongs or your hands then spread into a single layer.
Bake for 15 to 20 minutes, stirring after 10 minutes. Aaaand done. That’s it.

These Baked Chicken Bites are SO versatile. First, they are great on their own with a favorite side dish for a ridiculously easy dinner.
But it doesn’t stop there. You can use them for topping salads, to add protein to your favorite pasta dish or to throw into a casserole. I mean, it is fall after all.

They also make a great option for meal prepping. You can make a huge batch and reheat them throughout the week for easy and healthy lunches.
You can even bake them, cool them and freeze for easy meals when you forget to pack a lunch or need an easy dinner on a busy weeknight.
Change It Up
I kept the seasonings and spices pretty basic so that the chicken can be super versatile. But if you are making a specific cuisine or meal, change the spices to fit that flavor profile.
For example, up the chili powder and add some cumin and oregano for a Mexican spin. These Baked Chicken Bites would be great to use in burrito bowls, tacos, enchiladas and more.

Baked Chicken Bites
- 1 lb. chicken breasts, cut into 1-inch chunks
- 1 1/2 Tbsp. butter, melted
- 1 tsp. kosher salt
- 3/4 tsp. garlic powder
- 3/4 tsp. onion powder
- 3/4 tsp. black pepper
- 1/4 tsp. cayenne pepper
- 1/2 tsp. chili powder
- Preheat oven to 400 degrees F. Add chicken to a rimmed baking sheet or 13×9 pan. Drizzle with butter. Sprinkle with spices and stir to coat the chicken evenly.
- Bake for 15 to 20 minutes, stirring after 10 minutes. Chicken should reach internal temperature of 165 degrees F.
