In these crazy, weird times I have found that easy dinners have been a complete life saver. The grill was our savior this summer.

With the weather changing, I’m all about finding fall and winter meals that are just as easy as throwing something on the grill. And these Baked Chicken Bites definitely fit the bill.

Ingredients for Baked Chicken Bites

  • Boneless skinless chicken breast: Cut into 1 inch chunks to ensure it bakes quickly.
  • Unsalted butter: I used butter rather than olive oil because it adds so much flavor. Since this is a pretty simple and straightforward dish, flavor is important.
  • Kosher salt: Adds flavor to the chicken.
  • Garlic powder: Garlic goes with everything in my opinion.
  • Onion powder: Gives the chicken flavor without being overwhelming.
  • Black pepper and cayenne pepper: Adds a little spice to the chicken. There’s just a little of each so it’s not overwhelming.
  • Chili powder: Adds a little spice and depth but doesn’t overtake the flavor.

How to Make Baked Chicken Bites

These are the easiest to make. If you want to keep it even easier, line your baking sheet with parchment paper or aluminum foil. Preheat the oven to 400 degrees F.

Cut the chicken into 1-inch pieces and add to the prepare baking sheet. Drizzle with melted butter and sprinkle on the spices. Toss together with tongs or your hands then spread into a single layer.

So Many Options

These Baked Chicken Bites are SO versatile. First, they are great on their own with a favorite side dish for a ridiculously easy dinner.

But it doesn’t stop there. You can use them for topping salads, to add protein to your favorite pasta dish or to throw into a casserole. I mean, it is fall after all.

Meal Prep Perfection

They also make a great option for meal prepping. You can make a huge batch and reheat them throughout the week for easy and healthy lunches.

You can even bake them, cool them and freeze for easy meals when you forget to pack a lunch or need an easy dinner on a busy weeknight.

Change It Up

I kept the seasonings and spices pretty basic so that the chicken can be super versatile. But if you are making a specific cuisine or meal, change the spices to fit that flavor profile.

For example, up the chili powder and add some cumin and oregano for a Mexican spin. These Baked Chicken Bites would be great to use in burrito bowls, tacos, enchiladas and more.

Add Italian seasoning and throw them on top of this Roasted Garlic Alfredo.
