Breaking out the grill is probably my favorite thing about warm weather. The smell of food grilling is just the best.

And it’s even better when you can prepare your whole dinner on the grill. These potatoes are sure to become your go to summer side dish.

Ingredients for Grilled Potato Wedges

Once again, this recipe is pretty basic and I bet you have everything you need already in your pantry. Here’s what you need:

  • Potatoes
  • Olive oil
  • Kosher salt
  • Black pepper
  • Onion powder
  • Garlic powder
  • Paprika

You can use whatever potatoes you have on hand for this recipe. They are all delicious on the grill. Yukon gold potatoes are what is pictured here but I’ve made them with russets and red potatoes with great success too.

I kept the spices basic to keep things simple and versatile. You can change up the spices depending on what you are serving with them.

If you’re going for an Italian vibe add in some basil and Italian oregano. Add cumin and chili powder for a Mexican vibe. You could pretty much add any spice and they would be delicious.

How to Make Grilled Potato Wedges

Cut your potatoes into wedges. As long as they are a decent size, you should be able to get 8 wedges out of each potato by slicing them in half and then slicing the halves into 4 wedges.

Dry the wedges well then add them to a large bowl. It’s important that they are dry in order to get a nice, crispy sear.

Toss the potatoes with the olive oil and spices until they are well coated. Now it’s time to get grilling.

Once the grill has reached 400 degrees F, carefully place the wedges directly on the grill grates.

Flip the potatoes every 5 minutes until they are tender. Depending on how big your wedges are it will take 10 to 20 minutes.

Because we’re keeping the grill at a relatively high heat, the outside of the potatoes become seared and charred to perfection. It also helps give them a little crisp that is so perfect with the tender, fluffy interior.

These grilled potato wedges are great with all the dips. Keep it classic with ketchup or get a little crazy with barbecue sauce, honey mustard or if you’re a true midwesterner, ranch.

  • 1 lb. potatoes, scrubbed clean and dried
  • 2 Tbsp. olive oil
  • 1 1/2 tsp. kosher salt
  • 1 tsp. black pepper
  • 1/2 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1/2 tsp. paprika

Instructions

  • Heat grill to 400 degrees F. Cut each potato into 8 wedges. Toss with olive oil then sprinkle with salt, pepper, onion powder, garlic powder and paprika. Toss to coat evenly.
  • Place wedges on preheated grill. Flip every 5 minutes, until fork tender. They will take 10 to 20 minutes, depending on their size. Remove from grill and enjoy.
