Fruit Pizza

The ultimate summer dessert, Fruit Pizza, starts with a sugar cookie base and is frosted with a simple cream cheese frosting and all your favorite fruit. It doesn’t get any better!

If there is one dessert that screams summer for me, it’s fruit pizza. With sweet berries plump and in season, it’s the perfect way to showcase them in a dessert. Because, who would want to be healthy and just eat the berries when you could arrange them beautifully atop a giant sugar cookie slathered with cream cheese frosting. Am I right?
Fruit Pizza
Fruit pizza is one of Joel’s all time favorite desserts and he always requests it throughout the summer. We’ve been super busy so I just got around to making it for the first time this summer a couple weeks ago. I took it to a get together at a friends house and it was devoured. 

Let me let you in on a little secret. Not only is this dessert a visual stunner, it’s incredibly easy to make. It starts with store-bought sugar cookie dough. You know, the stuff in the tube in the refrigerated section. 

If this shortcut kills your soul or something, go ahead and make some homemade sugar cookie dough but I have no problem taking some help from the store sometimes to make my life easier.

The store-bought dough gets pressed into a pizza pan and baked to golden perfection. Use that time to dice up your fruit and whip up the super simple 4 ingredient frosting. Once the cookie cools, simply frost it and top it with your fruit of choice.

This is super customizable so use whatever fruit is your favorite. Joel loves any and all fruit atop his and I’m more of a strawberry and pineapple kind of girl. When I make it just for family everybody gets their own section and can put whatever fruit they want on it. Not the prettiest but everybody is happy and it still tastes delicious.

The one tip I have for you is if you want to add bananas, wait until you are ready to serve to slice and add them to the pizza. Nothing worse than a brown, mushy banana on your beautiful fruit pizza.

Fruit Pizza

Ingredients

  • 8 oz. cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 tsp. vanilla extract
  • 1 cup Cool Whip
  • 1 roll sugar cookie dough
  • Assorted sliced fruit

Instructions

  • Press sugar cookie dough into a pizza pan and bake at 350 degrees for about 12 minutes. Cool.
  • Mix cream cheese, sugar, vanilla and cool whip together then spread over the cooled crust.
  • Top with desired fruit and enjoy.
