Mix up a few Coconut Mojitos for the ultimate tropical vibes at home. Packed full of sweet coconut flavor, this drink will quickly become a summertime favorite.

I’m calling it now, these Coconut Mojitos are the official drink of summer for me. The first sip makes you feel like you’re hanging on the beach and that’s everything I need right now.
There is a rich, creaminess to the drinks along with the sweet tropical coconut flavor and a little zing from the mint and lime that balances out that sweetness. It’s just all so good together.
So Much Coconut Flavor
We’re getting coconut flavor from three different elements in the drink. The first is coconut rum. It’s good in all the things, but especially this mojito.
Second, we’re going to make a toasted coconut simple syrup that will not only provide more coconut flavor but also the sweetness for the drink.
Last, cream of coconut. If you’ve never had this in a drink before you are in for a treat. It adds so much creaminess and sweet coconutty goodness.
Ingredients for Coconut Mojitos
Let’s Make the Toasted Coconut Simple Syrup
Simple syrup is incredible easy to make. Start out by heating your saucepan over medium heat. Add the sweetened coconut to the dry pan and cook, stirring often until the coconut turns golden brown.
Watch it closely as it can go from golden to burned very quickly.
Add sugar and water to the saucepan and bring to a boil. Stir for a minute, until the sugar is dissolved.
Remove from the heat and allow to sit for 20 minutes. This will allow the toasted coconut to infuse the simple syrup.
Place a fine mesh strainer over a bowl and strain out the coconut. Store in the refrigerater in a jar or bottle with a lid.
Allow to cool before using in these coconut cocktails. It’s good for up to a month.
Side note: this simple syrup is also incredible in iced coffee!
Mix Up the Coconut Mojitos
Add lime juice, toasted coconut syrup, cream of coconut and coconut rum to the shaker. Top with ice and seal the lid. Shake it like crazy.
Fill a glass with ice then pour the drink over the ice. Top with club soda and get ready to be transported to the tropics.
More Summery Drinks
For the toasted coconut syrup:
- 1 cup sweetened coconut
- 1 cup water
- 1 cup granulaed sugar
For one mojito:
- 5 mint leaves
- 1 1/2 oz. lime juice
- 2 oz. cream of coconut
- 2 oz. coconut rum
- 2 oz. toasted coconut syrup
- 2 oz. club soda
- For the toasted coconut syrup: heat a large saucepan over medium heat. Add coconut to the dry pan. Cook, stirring often, until the coconut is golden brown. Watch it closely since it can burn quickly. Once toasted, add water and sugar to the saucepan. Stir and bring to a simmer. Cook for 1 minute, until sugar is dissolved. Remove from heat and let sit for 20 minutes to infuse the flavor. Strain the coconut out of the syrup and store the syrup in a jar in the refrigerator for up to 1 month.
- To make a mojito: add mint to a cocktail shaker, break up the mint with a muddler or the end of a wooden spoon. Add lime juice, cream of coconut, coconut rum and toasted coconut syrup. Add ice then place lid on shaker. Shake for 30 seconds.
- Fill a glass with ice. Pour drink through strainer top of the cocktail shaker over the ice. Top with club soda and lightly stir to combine with a straw. Enjoy.
