Ok, how much do we love a sheet pan dinner? Everything cooked on one pan with basically no dishes and it’s healthy and simple. Sign. Me. Up.

I am always on the hunt for new ways to make dinner easy for you guys. And sheet pan meals are one of the easiest options around. We’ve all loved this sheet pan buffalo chicken recipe for years but there may be a new favorite sheet pan meal in town. 

Boneless pork chops, a medley of fresh vegetables and some simple herbs and spices all come together to create this new family pleasing meal. 

Vegetable Selection

To pair with the sheet pan pork chops, I picked a handful of vegetables that pair nicely with pork and have varying textures to keep things interesting. The onions become soft and sweet. The potatoes get crispy on the outside and tender within. The peppers soften but keep a bit of their snappy texture.

These vegetables are great options but if you’re missing one or have some extra of something else from the week go ahead and swap things out. Use what you have in your crisper drawer. Some great additional vegetables for this sheet pan meal would be broccoli, cauliflower, green beans, squash and really anything else.

Keep in mind, some of these veggies may not cook at the same rate. If you’re using cauliflower, make sure to cut it into smaller florets so it has time to soften and caramelize without having to cook the meal longer than the recipe states. If zucchini is getting added to the mix, wait to add it to the sheet pan until after everything else has been cooking for 10 minutes.

Equipment

Ingredients

  • 4 1/2-inch thick boneless pork chops
  • 1 lb. baby red potatoes, halved
  • 1 bell pepper, cut into strips
  • 2 medium carrots, peeled, cut into 2-inch chunks and halved
  • 1/2 large onion, sliced
  • 2 tsp. kosher salt
  • 1/2 tsp. black pepper
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 1/2 tsp. dried thyme
  • 1/2 tsp. sweet paprika
  • 3 Tbsp. olive oil

Instructions

  • Preheat oven to 400 degrees F. Arrange vegetables on one side of the sheet pan. Place the pork chops on the other side.
  • In a small bowl, combine salt, pepper, garlic powder, onion powder, thyme and paprika. Drizzle olive oil evenly over the vegetables and pork chops. Toss with hands to evenly coat. Sprinkle seasoning mix over everything and toss again. Spread in a single layer.
  • Bake for 15 minutes. Remove sheet pan from oven and flip vegetables. Place back in the oven and bake another 15 to 20 minutes.

  1. The oven is hands down my favourite kitchen appliance (just because I don’t have a dishwasher)for two reasons. One is because I love to bake and the other is because I love that in the oven you can make such simple yet delicious dinners in such a short time. So efficient. And so few dishes to dish!
