Meet your new morning favorite. Iced Irish Coffee includes a simple homemade (non-alcoholic) Irish creamer, cold brew coffee and a little brown sugar. All the flavors of a classic Irish coffee but acceptable for mornings.

Forget the green beer. Let’s drink these Iced Irish Coffee’s all St. Patrick’s Day long.
Who’s ready for iced coffee season? I drink my coffee iced year round, no matter the weather, but I know I’m in the minority on that one.
I start my morning off each day with an iced coffee so when I was dreaming up ideas to share for St. Patrick’s Day and Irish coffee popped into my head, I knew an iced version would be way more appealing and different.
A traditional Irish coffee has whiskey in it but since I’m pushing this drink as a way to start your morning I’m leaving it out. If you want to transition this into a nightcap, stir in a shot of whiskey or Bailey’s.
To make this Iced Irish Coffee we start off with a simple homemade Irish creamer. It’s flavor is similar to that of Bailey’s which is what gives it the Irish name.
Half and Half
All the Bailey’s vibes without the liquor. Once the creamer is mixed up, you’ll have enough to make 12 Iced Irish Coffee’s through the next few weeks. It’ll keep until the expiration date on your half and half carton.
You can either pick up some cold brew or make your own for the coffee.
I like my coffee a little (and sometimes a lot) sweet so I added some brown sugar to the recipe. You can leave it out, add less or more depending on how you prefer your coffee.
If you have a cocktail shaker, I definitely recommend using it to mix up all your ingredients. It makes it super cold and foamy. But if you don’t have one, no worries. Instead, take your straw and stir that drink aggressively. It won’t be quite that same but you’ll get a similar result.
It’s super creamy, a tiny bit chocolate-y and that touch of almond extract comes out right at the end of your sip. Although St. Patrick’s Day is right around the corner, you’re going to want to keep this creamer stocked and ready for any day of the week.
Iced Irish Coffee
For Irish Creamer:
1 1/2 cups half and half
1 1/2 Tbsp. chocolate syrup
1 1/2 tsp. vanilla extract
1/4 + 1/8 tsp. almond extract
For Iced Irish Coffee:
1 cup cold brew coffee
1 1/2 tsp. brown sugar
2 Tbsp. Irish creamer
Optional: Bailey's or Irish whiskey
In a bowl, stir together half and half, chocolate syrup, vanilla extract and almond extract.
Add ice to a cocktail shaker, add all ingredients and close lid tightly. Shake for 10 seconds until cold and foamy. Pour into a glass filled with ice. If you don't have a cocktail shaker. Pour coffee in a glass filled with ice. Add creamer and brown sugar and stir vigorously until sugar is dissolved and coffee is foamy.
