Like the good midwesterner that I am, I love a good crispy, gooey grilled cheese. Especially when the temperatures start to drop.

Ingredients for 4 Cheese Grilled Cheese

  • Sourdough bread: Personally, I think sourdough is the best bread of all so naturally that’s what I chose for this sandwich. You can use regular white bread in a pinch.
  • Mayo: Listen up, mayo is far superior to butter when it comes to toasting a grilled cheese sandwich. It adds a little tanginess and makes the exterior SO crisp.
  • Whipped cream cheese: This is one of the secret cheeses I mentioned earlier. It adds some major creaminess and tang to the sandwich.
  • Sharp cheddar cheese: Shredded cheese melts so nicely in a grilled cheese so that’s the route I went with this sandwich. I love the sharpness cheddar adds.
  • Pepper jack cheese: Adds a little kick.
  • Colby jack cheese: This classic cheese adds some mild flavor and melts nicely.

How to Make the Perfect Grilled Cheese

Heat a skillet over medium-low heat. I love using a cast iron skillet when making grilled cheeses. It gives them an extra crunch factor.

Start out by spreading the outside of the bread with a little mayo. Make sure the whole surface is completely covered to ensure it gets evenly crispy.

Put the bread mayo side down to assemble the sandwiches. Spread one slice of the sandwich with cream cheese then sprinkle with sharp cheddar, pepper jack and colby jack cheeses.

Put the top piece of bread, mayo side on the outside to assemble. Grill the sandwich until golden brown on the outside and melted to gooey perfection on the inside.
