Ingredients

For the toasted coconut syrup:

  • 1 cup sweetened coconut
  • 1 cup water
  • 1 cup granulaed sugar

For one mojito:

  • 5 mint leaves
  • 1 1/2 oz. lime juice
  • 2 oz. cream of coconut
  • 2 oz. coconut rum
  • 2 oz. toasted coconut syrup
  • 2 oz. club soda
  • ice

Instructions

  • For the toasted coconut syrup: heat a large saucepan over medium heat. Add coconut to the dry pan. Cook, stirring often, until the coconut is golden brown. Watch it closely since it can burn quickly. Once toasted, add water and sugar to the saucepan. Stir and bring to a simmer. Cook for 1 minute, until sugar is dissolved. Remove from heat and let sit for 20 minutes to infuse the flavor. Strain the coconut out of the syrup and store the syrup in a jar in the refrigerator for up to 1 month.
  • To make a mojito: add mint to a cocktail shaker, break up the mint with a muddler or the end of a wooden spoon. Add lime juice, cream of coconut, coconut rum and toasted coconut syrup. Add ice then place lid on shaker. Shake for 30 seconds.
  • Fill a glass with ice. Pour drink through strainer top of the cocktail shaker over the ice. Top with club soda and lightly stir to combine with a straw. Enjoy.
