Breakfast Fried Rice
Another savory breakfast for you coming in hot. This Breakfast Fried Rice is packed with scrambled eggs and lots of crispy bacon. A glorious way to start your day.
Servings 6 servings
- 5 slices thick cut bacon
- 4 large eggs
- 1/4 tsp. pepper
- 3 cups cooked, cold sushi rice (or regular white rice)
- 1 Tbsp. soy sauce
- 1/2 Tbsp. sesame oil
- 1/2 tsp. sesame seeds
Heat a large skillet over medium-high heat. While the skillet is heating, dice the bacon into small pieces. Add the bacon to the hot skillet. Cook until crisp. Remove bacon to a paper towel lined plate. Leave one tablespoon of bacon grease in the skillet.
Whisk the eggs and pepper in a small bowl. Add to hot skillet and scramble until just cooked. Add rice and stir. Drizzle in soy sauce and sesame oil. Stir to combine. Cook for one minute undisturbed. Stir and cook another minute. Stir in bacon and sesame seeds nd serve.
