Ingredients
For the mint simple syrup:
1cupwater
1cupgranulated sugar
1/3cuppacked mint leaves
For the lemonade:
6cupscubed watermelon
1cupfresh lemon juice
1cupwater
1cupmint simple syrup
Instructions
To make mint simple syrup: add water and sugar to a small saucepan. Bring to a simmer and cook for 2 minutes, until sugar is dissolved. Remove from heat and stir in mint leaves. Let steep for 30 minutes. Pour into a container with a lid or a bottle and store in refrigerator.
Add watermelon to a blender and blend until smooth. Strain through a fine mesh strainer into a clean bowl. Add to a pitcher. Add lemon juice, water and 1 cup mint simple syrup. Stir to combine. You can add more simple syrup if you want it sweeter. Store any unused simple syrup in the fridge for up to a month.
Chill lemonade for an hour before serving. Give it a good stir before pouring. Good up to 1 week.
