These pretty Strawberry Sugar Cookies are sure to impress at your next party. Soft and chewy inside with a crunchy sugar exterior, these fruity cookies will become your new favorite.
Preheat oven to 350 degrees F. Add butter, 1 cup granulated sugar and powdered sugar to the bowl of a stand mixer. Cream until light and fluffy, about 3 minutes.
Add oil and mix until it's combined. It may be a little chunky, that's ok. Add eggs and vanilla extract and cream until combined. Add jello mix, baking soda and salt. Mix then scrape down sides. Add flour and mix until just combined.
Add remaining 1/2 cup sugar to a shallow bowl or plate. Using a regular size cookie scoop, portion out cookie dough and roll into balls. Roll the cookie dough in the sugar. Place on an ungreased cookie sheet with about 2 inches space between them. Bake for 10 minutes. Let cool on cookie sheet for 5 minutes then move to a cooling rack. Store in an airtight container.
