Ingredients
1/2lb.breakfast sausage
7largeeggs
1/2cupmilk
1/2tsp.kosher salt
1 1/2cupsfrozen southern hash browns
1 1/4cupsshredded cheddar cheese
Nonstick cooking spray
Instructions
Preheat oven to 350 degrees F. Heat a large skillet over medium heat. Add breakfast sausage and break up with a wooden spoon. Cook until browned and cooked through.
In a large bowl or large liquid measuring cup (preferably something with a spout), whisk togeher the eggs, milk and kosher salt. Set aside.
Place a muffin pan on a baking sheet. This will catch anything that may overflow. Spray the muffin pan generously with nonstick spray. Evenly divide the hash browns among each muffin cup. Repeat with sausage and shredded cheddar cheese. Evenly pour the egg mixture into each muffin cup.
Bake for 30 minutes, or until no longer giggly in the middle when you give the pan a light shake.
