Roasted Potatoes and Broccoli

Looking for an easy side dish with just a few ingredients? Roasted Potatoes and Broccoli are simple to throw together and you probably already have everything you need on hand.

I am always on the lookout for an easy side dish on busy weeknights. And this one is perfect because there’s just a little prep and a relatively quick cook time.

While the potatoes and broccoli are roasting, you’ll have time to get your main dish cooked. Great for weeknight when you don’t feel like thinking too hard.

Ingredients for Roasted Potatoes and Broccoli

The ingredient list is short and sweet. Here’s what you are going to need:

  • Potatoes: My favorite potatoes to use are either yukon gold or red potatoes. You could also use russet if that’s what you have but the texture isn’t as smooth.
  • Fresh broccoli
  • Olive oil
  • Kosher salt
  • Lemon pepper
  • Garlic powder
  • Onion powder

Prep Your Veggies

Start by washing and drying your potatoes and broccoli. Making sure they are dry will aid in crisping them up while they are roasting.

Chop the potatoes and broccoli into evenly sized bite-size pieces. Add to a large rimmed baking sheet.

Drizzle potatoes and broccoli with olive oil then sprinkle with the seasonings. Toss well with your hands, ensuring everything is coated evenly.

Time to Roast

Now that the veggies are prepped, it’s time to roast. Before adding the pan to the oven, give it a good shake to ensure everything is in a singe layer.

Add to your preheated oven and roast for 20 minutes. Remove from the oven and flip. Roast another 10 minutes until golden and crispy.

Serving Ideas

Now that you have a simple and delicious side dish, let’s talk about what to serve with them.

Grilled chicken, grilled fish or steak would all be great with this dish. If you want to get a little fancy, I think these avocado bbq chicken melts would be incredible.

I also love these roasted potatoes and broccoli with hot ham and cheese sandwiches.

Ingredients

  • 1 pound potatoes, diced into 1-inch chunks
  • 3/4 pound fresh broccoli florets, cut into bite-size pieces
  • 1 Tablespoon olive oil
  • 1 teaspoon kosher salt
  • 2 teaspoons lemon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  • Preheat oven to 425 degrees F. Add potatoes and broccoli to a large rimmed baking sheet. Drizzle with olive oil. Sprinkle with salt, lemon pepper, garlic powder and onion powder. Toss well to coat.
  • Bake for 20 minutes. Remove from oven and flip. Bake another 10 minutes.
