This super simple black peppercorn marinade will bring all the flavor to your chicken, beef, pork and veggies. Keep it on hand all summer long.

I love a marinade, especially in the summer. They add so much flavor and goodness to simple grilled meats.
I mean, when dinner only has to take a few minutes and still tastes crazy good and is healthy to boot you know you have a winner.
Let’s start out by saying this marinade is PEPPERY. Those that know me know I love me some black pepper.
I put it on everything. Seriously, on all the things. If you don’t dig that spicy, peppery kick this is not the recipe for you.
But it doesn’t just bring a peppery flavor. The red wine vinegar adds a really nice, fresh zing to the peppercorn marinade. There’s also a bit of Dijon mustard going on that brings some tanginess and sharpness.
It’s just all so good together and has become my official favorite summer marinade.
This black peppercorn marinade is sooo good on chicken, steak, pork and even vegetables. Throwing them on the grill after marinating puts them totally over the top.
Another amazing thing about this marinade, you toss it all in a mason jar and shake away. And done.
You can whisk it in a bowl too if that’s your thing. The point, it only takes the time it takes you to measure the ingredients.
You can marinate as little as an hour with great flavor or up to overnight for a huge black pepper punch. I love marinating overnight for optimal flavor.
But no matter what amount of time or planning situation you have going on, you can make this black peppercorn happen.

Black Peppercorn Marinade
Ingredients
- 1/2 tsp. kosher salt
- 1 Tbsp. black peppercorns
- 2 Tbsp. coarse black pepper
- 1 Tbsp. Dijon mustard
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 2-3 cloves garlic, chopped
Instructions
- Add everything to a mason jar, close lid and shake well. Or whisk everything together in a bowl. Marinate chicken, beef, pork or veggies for 8 hours or up to overnight in the refrigerator.
