Maple Chipotle Sweet Potatoes

Change up your Thanksgiving meal with these roasted Maple Chipotle Sweet Potatoes. They add the perfect balance of sweet and spicy and smoky to your holiday spread.

Ingredients

  • 2 pounds sweet potatoes, diced into 1-inch chunks
  • 2 Tablespoons olive oil
  • 1 1/2 teaspoons kosher salt
  • 2 Tablespoons sauce from a can of chipotle in adobo sauce
  • 1/4 cup pure maple syrup

Instructions

  • Preheat oven to 425 degrees F. Line a rimmed baking sheet with parchment paper or foil. Add diced sweet potatoes to the prepared baking sheet. Drizzle with olive oil and season with salt. Toss well. Bake for 20 minutes.
  • While sweet potatoes are roasting, mix together the adobo sauce and maple syrup. After 20 minutes, remove sweet potatoes from oven and drizzle with prepared sauce. Toss well and place back in the oven. Bake for 20 minutes, flipping halfway through cooking time. Serve immediately.
