Ingredients

  • 16 ounces elbow pasta
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 3 cups whole milk
  • 4 cups shredded cheddar cheese, divided
  • 3/4 cup shredded parmesan
  • 1/2 cup romano cheese
  • 6 slices American cheese (from the deli, not Kraft singles), ripped into pieces
  • 1/2 cup small dices of cheddar

Instructions

  • Bring a large pot of water to a boil. Once boiling, salt water and cook pasta according to box instructions.
  • Meanwhile, make the cheese sauce. Heat a medium size saucepan over medium heat. Add butter and allow to melt. Whisk in flour and salt. Cook for 1 minute, whisking often. Add half the milk to the mixture and whisk until smooth. Cook, whisking occasionally, until slightly thickened. The mixture should coat the back of a spoon. Add remaining milk and cook again until thickened.
  • Add 2 cups shredded cheddar, parmesan cheese and romano cheese. Stir until melted and smooth. Add American cheese and whisk until smooth. Remove from heat.
  • Add cooked pasta into a 13x9 baking dish. Pour cheese sauce over the pasta and stir until well coated. Add diced cheddar and stir again. Top with remaining 2 cups of shredded cheddar. Place under the broiler until cheese is just melted. Serve immediately.
