Strawberry Mango Popsicles

Cool off this summer with these Strawberry Mango Popsicles. Healthy, refreshing and totally delicious.

Ingredients

  • 1 3/4 cups frozen mango chunks
  • 1 3/4 cups full-fat coconut milk, divided
  • 2 limes
  • 2 Tablespoons honey, divided
  • 1 cup frozen strawberries

Instructions

  • Add frozen mango, 1 cup coconut milk, juice of 1 lime and 1 tablespoon of honey to a blender and blend until smooth. Place half the mixture in a bowl and place in the freezer. With the remaining mixture, divide among 10 popsicle molds. Set aside.
  • Rinse out the blender. Add strawberries, remaining 3/4 cup coconut milk, juice of 1 lime and 1 tablespoon of honey and blend until smooth. Divide among the popsicle molds. Grab the remaining mango mixture from the freezer. Divide evenly onto the top of the strawberry mixture. Place lid on popsicle mold and place popsicle sticks in the mold. Freeze for at least 4 hours.
