Parmesan Zucchini Bites
Fresh summer zucchini gets a major upgrade when tossed in butter and Italian seasonings and a hefty sprinkle of parmesan cheese. These Parmesan Zucchini Bites are the perfect summer side dish.

- 3 medium zucchini, 1/4-inch slices
- 1 Tablespoon butter, melted
- 1 1/2 teaspoon Italian seasoning
- 3/4 cup grated parmesan
Preheat oven to 450 degrees F. Line a large baking sheet with parchment paper or foil. Lay zucchini slices on the baking sheet in a single layer. Brush with butter than sprinkle with Italian seasoning. Sprinkle evenly with grated parmesan.
Bake for 15 to 20 minutes. Enjoy on their own or dip in marinara or ranch dressing.
