Ingredients
1Tablespoon olive oil
3/4cupdiced onion
1poundground beef
1ounce packettaco seasoning or 1/4 cup homemade
1cupwhite rice
2cupsbeef stock
2/3cupqueso dip
diced tomatoes
shredded lettuce
sour cream
sliced avocado
Instructions
Heat a large skillet or dutch oven over medium heat. Once hot, add the olive oil. Add diced onion and saute until slightly softened, 1 to 2 minutes. Add ground beef and break up with a wooden spoon. Cook until no longer pink.
Stir in taco seasoning, rice and beef stock. Bring to a simmer. Cover and cook for 20 minutes.
Remove from heat and stir in the queso dip. Portion out into bowls and top with desired toppings.
