  • 1/4 cup olive oil
  • 1 Tablespoon dijon mustard
  • 1 Tablespoon balsamic vinegar
  • 1 Tablespoon brown sugar
  • 2 teaspoons minced garlic
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 pound pork tenderloin

  • In a bowl, whisk together olive oil, dijon mustard, balsamic vinegar, brown sugar, garlic, salt and pepper. Add pork tenderloin and turn to coat. Marinate in the fridge for at least 15 minutes or up to overnight.
  • Remove pork tenderloin from the marinade and place in the basket of your air fryer. Air fry at 400 degrees for 7 minutes. Flip pork and air fry another 7 minutes. Check the temperature of the pork at this point. You want it to be 145 degrees F. Add up to 4 minutes of cook time to reach the proper temperature. Once done, place pork on a cutting board and allow it to rest for 5 minutes before slicing.
