These Blackberry Mojitos will quickly become the drink of summer. An easy blackberry simple syrup and all the classic mojito ingredients are all you need for this refreshing cocktail.

For the Blackberry Simple Syrup:
- 1 1/2 cups fresh blackberries
- 1 cup granulated sugar
- 1 cup water
For the Blackberry Mojito:
- 5 blackberries
- 3 mint leaves
- 3/4 oz. lime juice
- 2 oz. blackberry simple syrup
- 2 oz. white rum
- 2 oz. club soda
For the blackberry simple syrup: add the blackberries, granulated sugar and water to a small saucepan over medium heat. Bring to a simmer. Cook for 15 minutes, stirring and smashing the berries every few minutes.
Place a strainer over a large bowl. Strain the syrup into the bowl. Allow to cool. Store in the refrigerator in an airtight container.
Place 5 blackberries and mint leaves in the bottom of a cocktail glass. Mash with a muddler until smashed and bruised. Add lime juice, simple syrup and white rum to the glass and stir until well combined. Add desired amount of ice and top with club soda.
