Ingredients
1lb.80/20 ground beef
Salt and pepper
Olive oil
1 1/3cups shredded hash browns
4slices thick-cut bacon
4large eggs
4slices sharp cheddar cheese
Sour cream
4hamburger buns
Instructions
Preheat grill over medium heat. Divide the ground beef into 4 equal parts and form into hamburger patties. Season with salt and pepper. Place on grill. Cook about 7 minutes per side, until cooked through.
Meanwhile, preheat two skillets over medium heat. Add bacon to one skillet and cook until crispy. Drain on a paper-towel lined plate. In the second skillet, add olive oil and the hash browns. Cook for 5 minutes, until golden and crispy. Flip and cook another 5 minutes. Remove from the skillet. Add a little more olive oil and crack the eggs into the skillet. Cook as desired. I think a drippy yolk is best.
To assemble: Place a hamburger pattie on each bun. Top with hash browns, bacon and egg. Spread sour cream on the top bun and place on top.
