No Bake Coconut Chocolate Chip Granola Bars

  • 1/4 cup coconut oil
  • 1/4 cup honey
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt
  • 1 1/3 cups old-fashioned oats
  • 2/3 cup unsweetened shredded coconut
  • 1/3 cup sliced almonds
  • 1/4 cup mini chocolate chips


  • Line an 8x8 pan with foil, leaving enough hanging off the edges to cover the top of the pan. Spray with nonstick spray. Set aside.
  • In a microwave safe bowl, combine coconut oil, honey, vanilla and salt. Microwave for 30 seconds to melt coconut oil fully. Stir well and set aside to cool slightly.
  • In a large bowl combine the oats, coconut and almonds. Drizzle liquid mixture over the oats mixture and stir well until fully combined. Stir in chocolate chips. 
  • Pour mixture into the prepared pan and spread evenly. Cover the bars with the extra foil and press firmly to compress the bars. Do this for a few minutes to get them to really stick together. Refrigerate for 15 minutes then slice into bars. Wrap tightly and refrigerate.
