I don’t know about you but I’m at the Super Bowl party for the food and commercials so when I’m planning what to bring, I take things very seriously.

And when it comes to football, buffalo or pizza flavored is always the answer. In comes these pepperoni pizza bites. They are SO simple to make with easy to find ingredients and they will be a huge hit with everyone.

Ingredients for Pepperoni Pizza Bites

These easy pizza bites take just a few ingredients to throw together. Here’s what you are going to need:

  • Rhodes yeast dinner rolls: Grab a bag of frozen Rhodes yeast dinner rolls from the freezer section at the grocery store. I love keeping these stocked at home for easy dinners and recipes. They taste homemade and you’ll totally fool everyone into thinking you we’re working in the kitchen all day.
  • Butter
  • Italian seasoning: Use your favorite brand or mix up your own.
  • Mozzarella cheese
  • Mini pepperoni: I like using the mini pepperoni for this recipe. If your store doesn’t carry the mini version, dice up some regular pepperoni into small pieces.
  • Nonstick cooking spray

Rise and Prep the Dough

First up is rising the bread rolls. I like to line a baking sheet with parchment but you can also use nonstick spray if you prefer. Place 12 rolls a few inches apart and cover with plastic wrap that has been sprayed with nonstick spray.

Allow to rise according to package directions. Once they look like this you’re ready to proceed with the rest of the recipe.

Assemble and Bake the Pepperoni Pizza Bites

Cut each roll into eight pieces. Add to a large bowl and toss with melted butter, Italian seasoning, shredded mozzarella and pepperoni.

Evenly divide the dough among 12-cup muffin tin that has been sprayed with nonstick spray. Bake until golden.

Can these be frozen? Yes! Allow to cool completely then place in a freezer bag. Keep frozen for up to 2 months. To thaw: let come to room temperature on the counter or place in the refrigerator overnight.

What’s the best way to reheat? You can reheat these in the microwave for about one minute or place in the oven at 350 degrees F for a few minutes.

How long are these good? Keep leftovers refrigerated and eat within four days.

  • Muffin tin

Ingredients

  • 12 Rhodes yeast dinner rolls
  • 2 Tablespoons butter, melted
  • 1 Tablespoon Italian seasoning
  • 1 cup mini pepperoni, or diced pepperoni
  • 1 1/2 cups shredded mozzarella cheese
  • nonstick spray
  • pizza sauce, for dipping

Instructions

  • Rise Rhodes rolls according to package directions.
  • Preheat oven to 350 degrees F. Spray a 12-cup muffin tin with nonstick cook spray. Set aside.
  • Cut each risen roll into 8 pieces. Add to a large bowl. Add melted butter, Italian seasoning, pepperoni and shredded mozzarella cheese. Toss well. Evenly divide the mixture among the muffin tin.
  • Bake for 18 to 20 minutes, until golden brown. Serve with pizza sauce for dipping.

  1. How do I cut up raw risen dough without deflating it?

    1. It will deflate a bit when you cut it but it rises again as it bakes.
