Strawberry Sugar Cookies

Aren’t these cookies the prettiest?! The pretty pink color and sweet burst of strawberry flavor makes them perfect for all your spring gatherings.

These cookies have it all. Light and fluffy on the inside while they still have a slightly crisp exterior thanks to the sugary coating before baking. They have a great chewiness to them that I think you will love.

Ingredients for Strawberry Sugar Cookies

This is a pretty basic cookie recipe with one surprise but easy to find ingredient. Here’s what you will need:

  • Unsalted butter: Make sure it’s room temperature before starting your cookie dough.
  • Granulated sugar
  • Powdered sugar
  • Vegetable oil: Will help give the cookies that fluffy, tender interior.
  • Eggs
  • Vanilla extract
  • All-purpose flour
  • Baking Soda
  • Kosher salt
  • Strawberry jello mix: You’ll need a small 3 ounce box for this recipe. You just need the powder.

Mix Up the Strawberry Cookie Dough

Make sure to start with softened butter. Toss it in your stand mixer and cream until nice and smooth. You can also use a hand mixer. Add both sugars and mix until lightened in color, about 3 minutes.

Add the vegetable oil and slowly mix until incorporated. If it’s not perfectly smooth, that’s ok. It’ll all come together in the end.

Add eggs and vanilla and mix again.

Toss in the dry ingredients and mix on low until just combined. Make sure to scrape down the sides and make sure everything is well incorporated.

Roll and Sugar for the Perfect Exterior

Once the cookie dough is mixed, it’s time to bake. Using a cookie scoop, portion out the cookie dough.

Roll into balls, they don’t have to be perfect, and roll them in granulated sugar. This will give a slight crunch to the exterior of the cookie. And it makes they extra pretty.

If you don’t want to roll them in sugar you can skip that step and bake them the same.

Change It Up

I adore these strawberry sugar cookies and there is so much potential for flavors with these since it’s jello that brings the fruity flavor to the cookies.

Switch out the strawberry jello mix for lime, cherry, raspberry, lemon, pineapple. You get the idea.

Storage Options

Keep at room temperature. Store in an airtight container at room temperature. The cookies will be fresh for about 4 days when stored this way.

Freeze cookie dough. You can roll the cookies, roll in sugar then place on a baking sheet close together. Freeze for 2 hours then place in a labeled freezer safe bag. The cookie dough will be good for up to 2 months when stored this way. Cookies may need an extra minute or two of baking time when baked from frozen dough.

Freeze baked cookies. Stack baked and cooled cookies in a freezer safe bag. Label with the date and freeze for up to 6 months. Thaw at room temperature and enjoy.

Ingredients

  • 1 cup butter, room temperature
  • 1 1/2 cups granulated sugar, divided
  • 3/4 cup powdered sugar
  • 1 cup vegetable oil
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 3 ounce box strawberry jello mix
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 4 1/2 cups all-purpose flour

Instructions

  • Preheat oven to 350 degrees F. Add butter, 1 cup granulated sugar and powdered sugar to the bowl of a stand mixer. Cream until light and fluffy, about 3 minutes.
  • Add oil and mix until it's combined. It may be a little chunky, that's ok. Add eggs and vanilla extract and cream until combined. Add jello mix, baking soda and salt. Mix then scrape down sides. Add flour and mix until just combined.
  • Add remaining 1/2 cup sugar to a shallow bowl or plate. Using a regular size cookie scoop, portion out cookie dough and roll into balls. Roll the cookie dough in the sugar. Place on an ungreased cookie sheet with about 2 inches space between them. Bake for 10 minutes. Let cool on cookie sheet for 5 minutes then move to a cooling rack. Store in an airtight container.
