Baked Pesto Chicken

This Baked Pesto Chicken is the easiest to prepare for a busy weeknight. All you need is chicken breast, prepared pesto, tomatoes, garlic powder and mozzarella cheese and dinner is served in less than 30 minutes.

If you need a ridiculously easy dinner, you’ve come to the right place. This Baked Pesto Chicken literally takes a handful of ingredients and only 30 minutes from start to finish.

And not only is it simple, but it’s packed with flavor thanks to the delicious pesto. Keep this one in your back pocket for busy nights.

Ingredients for Baked Pesto Chicken

  • Chicken breast: Boneless skinless is what we’re using for this recipe. You could also use boneless thighs if desired.
  • Prepared pesto: You’ll find pesto in the pasta aisle of your grocery store. You can also use homemade if you want.
  • Garlic powder: Season before slathering with pesto. You could also add some red pepper flakes to add some spice to the dish.
  • Tomatoes: Thinly sliced roma tomatoes add more flavor and complexity to this simple dish. You can leave them off if you don’t have tomatoes on hand.
  • Shredded mozzarella cheese: Because everything is better with loads of cheese.

How to Make Baked Pesto Chicken

This baked chicken with pesto is super simple to make. Start by preheating your oven and grabbing a 9×9 baking dish or a similar sized baking dish.

Add chicken breasts to the baking dish then sprinkle with garlic powder, salt and pepper. Spread pesto over the chicken until it’s coated.

Top with tomato slices and shredded mozzarella cheese. Bake until the chicken is cooked through and the cheesy is gooey and slightly golden.

What to Serve

There are so many options that will taste delicious alongside this pesto chicken. My obvious choice would be to cook some pasta and toss it with the leftover pesto.

It would also be great with butter rice and roasted vegetables. Or a simple side salad.

Ingredients

  • 2 boneless skinless chicken breasts
  • 1/2 tsp. garlic powder
  • 1/4 tsp. pesto
  • 1 roma tomato, thinly sliced
  • 1 cup shredded mozzarella

Instructions

  • Preheat oven to 375 degrees. Add chicken to a baking dish. Sprinkle with garlic powder. Spread pesto over chicken then top with tomato slices. Sprinkle with mozzarella cheese. Bake for 20 to 25 minutes, until chicken is no longer pink.
