Don’t we all need more healthy snack options in our lives? I get bored easily and like to mix things up so having different choices is always a win for me.

And you know I’m grabbing for the potato chips (hello weakness) if there aren’t healthy snack prepped and ready for munching. That’s where these Strawberry Energy Balls come in.

Ingredients for Strawberry Energy Balls

Here’s what you are going to need to make these delicious Strawberry Energy Balls:

  • Freeze dried strawberries
  • Roasted, salted cashews
  • Dates
  • Rolled oats
  • Peanut butter
  • Vanilla extract

You can find freeze dried strawberries in the dried fruit area of your grocery store. They are super crisp and packed full of sweet strawberry flavor. Grab the dates while you’re there too.

The recipe calls for peanut butter but you can use any nut butter you prefer. It doesn’t really add flavor but is more necessary for binding the energy balls together.

How to Make Strawberry Energy Balls

These energy balls are so simple to make. First, you’ll need a food processor or high powered blender. Place the freeze dried strawberries in the food processor and pulse until you have a fine powder.

Next, add all the remaining ingredients and process until everything is fine and a ball forms.

I used my favorite cookie scoop to portion these out to ensure they were all he same size. Roll each portion in your hands to form a ball.

You’ll end up with 14 sweet, totally poppable strawberry energy balls. Place them in an airtight container and keep them in the fridge for snacking.

Mix It Up

If you’re not a fan of strawberries or just want to change things up, you can use any type of freeze dried fruit in place of the strawberries.

I’ve seen freeze dried raspberries, blueberries, pineapple, apples and mangoes just to name a few. Imagine how delicious those would be as well.

Or a half and half situation. Strawberries and pineapple would be a dreamy combination.

These are a great option for lunch boxes. My kids always want a sweet treat but I don’t always want to give them something sugary so I often throw in an energy ball for their “dessert.”

  • 1 1.2 oz. bag freeze dried strawberries
  • 1/3 cup roased, salted cashews
  • 1 cup pitted dates
  • 1/2 cup rolled oats
  • 1/2 cup peanut butter (or nut butter of choice)
  • 1 1/2 tsp. pure vanilla extract

Instructions

  • Place freeze dried strawberries in the food processor. Pulse until you have a fine powder. Add remaining ingredients and process until everything is finely chopped and a ball forms.
  • Using a cookie scoop, portion out the dough into 14 even sized balls. Roll in your hands to make them perfectly round. Store in an airtight container in the refrigerator.
