How do you all feel about a small batch dessert recipe? I love them but realized recently that I’ve never shared one on the blog.

I especially love them for recipes like crisps or cobblers since they are best when eaten fresh from the oven. They just never taste as yummy when reheated so the small batch situation works really well with these peach crisps.

Ramekins are the perfect vessel for making small batch desserts and I love these. If you don’t have any, you could use small oven safe bowls instead or a jumbo muffin tin even.

And there are so many other reasons to love a small batch recipe. I don’t have a huge sweet tooth but sometimes that craving strikes and I want just a little something to satisfy it and not have a whole pan of dessert tempting you the rest of the week.

Because you’re only preparing enough for two servings, the prep time in cut down too making you dessert wait time shorter. Win. The prep only takes about 10 minutes for this peach crisp recipe. It involves dicing two peaches and mixing up a quick oat crisp topping.

Preheat the oven while you are prepping then throw them in for 30 minutes to bake to tender, crispy perfection and you’ll have a hot, fresh dessert for two in less than 45 minutes.

And you could make this crisp with just about any produce you have on hand. I’m loving peaches right now since they are in season. We’ve been buying them like they are going out of style and they’ve been perfectly ripe every time. So obviously they yielded the most amazing, sweet and juicy peach crisp around.

Take advantage of what’s in season when you’re making this small batch recipe. You could switch the peaches for a medley of berries in the summertime or thinly sliced apples in the fall.

The finished product is pretty much slap your mama good. The peaches become so tender, sweet and juicy while they bake and that crumbly, crisp oat topping with just a hint of cinnamon puts it over the top. Well, the scoop of creamy vanilla ice cream is what actually puts it over the top and totally necessary.

Basically, you just really need a small batch peach crisp in your life.
