Ingredients for Honey Butter Carrots

You just need a few simple, common ingredients to whip up these amazing carrots. They are seriously so good and I’ve never really liked cooked carrots. Here’s what you will need:

  • Carrots: You’ll need 1 pound of fresh carrots for this recipe. Peel and slice them into 1-inch coins.
  • Vegetable oil: For sauting the carrots before making the honey butter sauce.
  • Butter: Because the ingredient list is small and butter is a major flavor, make sure to use good quality butter. Kerry Gold is my personal favorite.
  • Honey: I love using local honey when cooking.
  • Kosher salt: For bringing out all the flavor of the carrots.
  • Dried thyme: I love the combination of thyme with the honey and butter.

How to Make Stove Top Honey Butter Carrots

Start by heating a large cast iron skillet over medium heat. I love using cast iron for this recipe because it gives good color to the carrots.

Add vegetable oil to the hot skillet then add in the sliced carrots. Cook for 3 to 4 minutes then add water. Cover the skillet and simmer the carrots for 10 minutes until they are tender-crisp.

Once the water is almost evaporated, add in the remaining ingredients and stir to coat. Cook another 3 to 4 minutes until the carrots are tender and the honey butter sauce is thick and syrupy.

Time and Space Saver

I love that they are made completely on the stovetop freeing up that precious and limited oven space for the turkey and all important casseroles.

The fact that they are super low-maintenance is huge too since the only attention they really need is during the first and last few minutes of cooking.

Ingredients

  • 1 lb. carrots, peeled and cut into 1/2-inch coins
  • 1 Tbsp. vegetable oil
  • 3/4 cup water
  • 2 Tbsp. unsalted butter
  • 2 Tbsp. honey
  • 1/2 tsp. kosher salt
  • 1/2 tsp. dried thyme

Instructions

  • Heat a cast iron skillet over medium heat. Add oil then carrots and saute them for 3 to 4 minutes. Add water. Cover and simmer for 10 minutes until crisp-tender.
  • Once most water has evaporated, add butter, honey, salt and thyme.  Cook for 3 minutes, until glazed and syrupy and tender.

  1. Carrots and I aren’t friends. I grew up with microwave-steamed carrots and never did like them. But we tried your recipe tonight with fresh bunched carrots and it was great!
