How do you feel about broccoli? It’s one of my favorite vegetables and one I eat several times a week. If you aren’t a big fan of broccoli, don’t give up on it because this spicy parmesan roasted broccoli just may change your mind.

Roasting broccoli changes the taste so much and provides a nutty, slightly sweet flavor. Pair that with the nutty parmesan cheese and spicy red pepper flakes and you have a party of flavors going on. 

This is my favorite pan for roasting vegetables. They never stick and always cook/brown evenly.

I’m always looking for or brainstorming simple side dish recipes for busy weeknights. There’s always the quick steam route or an easy salad but sometimes you want something a little different and a lot more flavorful. But without any extra effort.

That’s where this broccoli comes in. All you need is fresh broccoli florets, red pepper flakes, olive oil and freshly grated parmesan cheese. 

Another bonus? It’s done in 25 minutes. Add a few minutes of prep to chop the broccoli and toss the ingredients together and it’s a 30 minute side with minimal work actually going into the dish. I call that a weeknight win. 

I love pairing this broccoli with roasted chicken, sloppy joe’s and one pot spaghettios (which also takes less than 30 minutes from start to finish).

Choose Your Spice Level

You can choose just how spicy your want your broccoli. I went with a teaspoon of red pepper flakes which provided a pretty good kick but wasn’t unbearably spicy. If you or your family don’t love super spicy, I would go with 1/2 teaspoon of red pepper flakes. If you like things crazy hot, add an extra 1/2 teaspoon.

Spicy Parmesan Roasted Broccoli

Ingredients

  • 3/4 lb. broccoli florets
  • 2 Tbsp. olive oil
  • 1/2 tsp. kosher salt
  • 1/4 tsp. black pepper
  • 1 tsp. red pepper flakes
  • 1/4 cup fresh shredded parmesan cheese

Instructions

  • Preheat oven to 400 degrees. Spread broccoli in an even layer on a nonstick baking sheet. Drizzle with olive oil and toss to coat. Sprinkle salt, pepper, red pepper flakes and parmesan cheese over the broccoli. Toss again to coat.
  • Roast broccoli for 15 minutes. Remove from oven and flip. Roast another 5 to 10 minutes, until desired caramelization has been reached.
