So Rihanna and Drake’s song “Work”, what the heck is she saying? I’m listening to Spotify and it just came on and it always confuses me. Like, what does der der der mean? Is it just a funny sound? Does me questioning this mean I’m getting old?

PB&J Parfait

I am turning 30 soon but that doesn’t make me old, old. Can I still listen to Rihanna? Will I start to embarrass my son soon? I am secretly looking forward to that though. I have so many questions. Please don’t let this mean I’m too old.

Are you guys still with me? Was that tangent too random? I don’t know what’s going on lately. And again with the questions. I’m sure you’re ready for the crazy lady to stop talking and just get on with the recipe. I understand. Sometimes I want to get out of my own head too.

I shared this delicious granola on Friday and now I have something amazing you have to make with it right now. My kids are currently obsessed with two things: peanut butter and jelly sandwiches and parfaits. So naturally after making the peanut butter pretzel granola I knew we would have to use it to make a parfait.

PB&J Parfait
It starts out with vanilla Greek yogurt, chia seeds, sliced strawberries and a hefty portion of peanut butter pretzel granola.  You could use strawberry yogurt if you want an extra “jelly” feeling.

The oats and peanut butter in the granola fill in for the rest of the classic sandwich flavors. Layer them in a pretty glass to up the fun factor.

The chia seeds are optional but they add fiber to the parfait and are a total requirement in our house. Whenever Hannah requests a parfait, she starts yelling “CHIA” as I grab out the ingredients from the fridge. The little weirdo is obsessed. So, we never leave them out.

Ingredients
  1. 1 cup vanilla Greek yogurt
  2. 1 Tbsp. chia seeds
  3. 1/3 cup sliced strawberries
  4. 1/4 cup Peanut Butter Pretzel Granola*
Instructions
  1. Layer the ingredients in the order given and enjoy. Add an extra dollop of Greek yogurt on top if desired.
