This recipe is a must have for every holiday in our family. And it’s a great way to get kids to eat their veggies any day of the week.

Ingredients for Broccoli Cheese Casserole

  • Frozen broccoli: Easy to grab and prepare. You could use fresh for this recipe as well but it would have to be steamed longer.
  • Velveeta cheese: Yep. I’m not even sorry about it. Velveeta gives this casserole a super creamy sauce without having to add anything else. I am strongly under the camp of: it won’t hurt you every once in awhile.
  • Ritz crackers: These buttery little rounds create the most delicious, rich topping for the casserole.
  • Butter: Melted butter and cracker crumbs make the buttery crust.

How to Make Broccoli Cheese Casserole

Preheat the oven to 350 degrees F. Steam the frozen broccoli according to the package directions. You can do this on the stove top or in the microwave.

While the broccoli is cooking, cut the velveeta into small pieces. Drain the broccoli and place it in an 8 x 8 baking pan.

Add the broccoli to the pan and stir together until the cheese is melted. It doesn’t have to be completely melted.

Crush the crackers and stir together with the melted butter. Sprinkle the cracker topping evenly over the broccoli cheese mixture.

Bake for about 20 to 30 minutes, until the cheese is fully melted and the topping is a nice golden brown.

Additional Topping Ideas:

I adore the buttery Ritz cracker crumb topping for this casserole but there are lots of other delicious, crunchy options you could use:

  • Crushed pretzels
  • Crushed potato chips
  • French fried onions
  • Cheese crackers like Cheez-Its or Goldfish
  • Bread crumbs

If you choose to use bread crumbs or cheese crackers, you’ll still need the melted butter.

If you choose one of the other options, you can skip the butter and just sprinkle them on top before baking.
